Chestnut Soup

Enjoy this tasty soup on a cold autumn or winter’s day.


  • 8 cups chicken stock
  • 1 1/2 lb chestnuts (peeled)
  • 1 cup chopped onion
  • 2 whole cloves
  • 1 bay leaf
  • 1/2 cup heavy cream
  • 3/4 tsp white sugar
  • salt to taste
  • ground black pepper to taste


  1. In a large saucepan, combine chicken stock, chestnuts, and onions. Add the bay leaf and cloves. Simmer over medium heat for 45 minutes.
  2. Discard bay leaf and cloves. Puree chestnut mixture in food processor and immersion blender.
  3. Add heavy cream, sugar, salt, and pepper to taste.
